My Favorite Bread Pudding Recipe
With the holidays I had been looking for some new holiday dessert recipes and came across this Bread Pudding recipe from Paula Deen. Of course, I have made some minor modifications but it is so good and a perfect treat to make with the kids.
Ingredients:
■5 large beaten eggs
■2 cups granulated sugar
■2 cups milk
■2 teaspoons pure vanilla extract
■3 cups cubed Italian bread, allow to stale overnight in a bowl
■1/2 cup packed light brown sugar
■1/4 cup (1/2 stick) butter, softened
■1 cup chopped pecans
Directions:
Preheat the oven to 350 degrees F. Grease a 13 by 9 by 2-inch pan.
- Mix together granulated sugar, eggs, and milk in a bowl; add vanilla. Pour over cubed bread and let sit for 10 minutes.
- In another bowl, mix and crumble together brown sugar, butter, and pecans. My older son doesn't like pecans, so instead of adding the nuts and making a crumble, I melt the butter and brown sugar together and drizzle over the top.
- Pour bread mixture into prepared pan. Sprinkle brown sugar mixture over the top and bake for 35 to 45 minutes, or until set. Remove from oven.
Modifications: Try adding diced apples, dried cranberries and orange zest to the bread before adding the egg mixture.
Add a sauce over the top: I don't add this sauce because I am serving to the children, but here are a few options to dress up this bread pudding for the adults.
Paula Deen's recipe calls for sauce as follows: Mix together the granulated sugar (1cup), butter (1 stick), 1 egg, and vanilla (2 teaspoons) in a saucepan over medium heat. Stir together until the sugar is melted. Add the brandy (1/4 cup), stirring well. Pour over bread pudding. Serve warm or cold.
When making the modified recipe, try adding Gran Marnier in place of the Brandy.

Huggies Santa Diapers....$3.00 each
We went to Babies R Us this evening, they had Huggies Santa Diapers on sale for $5...add the $2.00/1 coupon from the 11/20 SmartSource and we got diapers for $3.00 each. YAY!!!
The sale is on today and tomorrow, but our stores were basically sold out tonight - we were only able to get 2 packages in our little guys size.
(2) Huggies Santa Diapers - $5.00each
(2) Huggies Santa Wipes - $2.29 each
Used (2) $2.00/1 coupons for the diapers and (1) $1.00/2 coupon for the wipes...and walked out of the store with two packages of diapers and two packages of wipes for under $10.
...and my hubby saw a mom of twins buying diapers too, so he gave her some coupons so she could save some money on them too. LOVE how thoughtful my couponing hubby is!!!
Very happy about our shopping trip tonight!!!

Coupons, Coupons Everywhere
I have to tell you we have been VERY lucky to get a local gas station owner to save his weekly coupon inserts from the un-sold papers. This does mean that some weeks we get a couple of inserts and other weeks we get 30 or more....and I have to say that this looks like a good week.
I have a big box of newspapers sitting in front of me right now and I will be going through it shortly to see what we have.
There are a few reasons that this has been important to our couponing:
1.) I get inserts from at least 3 different papers (some areas have better coupons - for example one paper may have a $0.75 off coupon, that will double to $1.50, where the other paper may have $1.00 off)
2.) When you find a good deal you can stock up
3.) When there are free items we get as many as we can (we have even ordered items at the store so that we wouldn't clear the shelf) and put them away for donations.
If you are new to couponing or want to take you couponing to the next level, I would say make a stop into your local gas stations / mini marts and ask them if they would be willing to give you the unsold papers. If they are just throwing them out anyway they shouldn't have a problem with you picking them up...and what's the worst that can happen? They may say no, and if that happens, all you need to do is move to the next one.
